Stephan Pyles, who was one of the pioneers in Southwestern cuisine at his now-closed Routh Street Cafe and Baby Routh in Dallas, has created a popular new 160-seat Dallas, restaurant, Star Canyon, which he opened last May. In addition, his cookbook, "The New Teas Cuisine," now in its third printing, has become the authority on Texas cooking.

What is the philosophy of Canyon?
It was a culmination of everything I had thought about for years. The philosophy in two words is New Texas -- from decor, to food, to style of service. It's important that there's a value perception here, which is very '90s. It's a place to have fun. It's not a temple of dining, as I might have thought Routh Street was. It's not completely about having a memorable meal; it's about having a memorable experience.
