JB's Restaurants (NASDAQ) confirmed last week it plans to convert as many as 20 of its 89 company-owned restaurants to its new "Galaxy Diner" concept, a 1950s nostalgia-themed, full-service restaurant the company has been developing for some time.
The first restaurant to be converted is a three-year-old JB's site at Provo's Plum Tree Shopping Center, 2250 No. University Parkway, said CEO Dave Pertl.
"We think the diner concept will be a good conversion concept for maybe as many as 20 of our current JB's restaurants over time. We'll know better after this one opens and we see the results," said Pertl, noting another conversion concept dubbed "Country Cottage Cafe" is planned...
