By the end of next year chef Roy Yamaguchi of Roy's Restaurant will open four new restaurants on the mainland.
With each new restaurant, costing $2 million to open, the expansion is indicative of how well Yamaguchi's business is doing. Currently, Yamaguchi owns 21 Roy's on the mainland, of which 18 are jointly owned with Outback Steak House, said Mark Running, vice president of operation for Roy's.
"Four is a very doable number. We have been focusing on major metropolitan areas," running said.
Yamaguchi is close to signing deals to open the new restaurants, offering Hawaii-fusion cuisine, in Los Angeles, Northern California and Miami.
